Description In this seminar we will focus on the biology of the yeast Saccharomyces cerevisiae, emphasizing it's historical importance in brewing and baking. We will discuss how yeast is used to make bread and several different alcoholic beverages. Several videos, illustrating the process by which a number of brews and spirits are made, will be shown in class.
